Bubble Green


2 cl thyme syrup
25 cl grape juice
4 cl vodka
4 mint leaves
2 cl lime juice
4 cl Jaillance Crémant de Bordeaux

Method :
Put the grape juice, mint leaves and thyme syrup into the glass part of the shaker and crush with a pestle.
Add the rest of the ingredients, and half-fill the metal part of the shaker with ice.
Pour the contents of the glass into the metal and shake vigorously.
Strain and pour into a cocktail glass. Top up with Jaillance Crémant de Bordeaux

Chef’s tip :
Use a martini glass or champagne flute.
Strain again through a fine sieve to ensure there are no tiny pieces of mint leaf floating in your cocktail.
